National Nutrition Month Celebrated at Green Hill with Cooking Presentation

March is National Nutrition Month® sponsored by the Academy of Nutrition and Dietetics. The annual event is “when the Academy of Nutrition and Dietetics reminds everyone to return to the basics of healthy eating. It is also the time of year when the Academy celebrates expertise of registered dietitian nutritionists as the food and nutrition experts.” Eatright.org.

The theme for 2017, “Put Your Best Fork Forward, acts as a reminder that each bite counts. Making just small shifts in our food choices, can add up over time.” Focusing on nutrient dense foods instead of empty calories goes a long way to providing the body with the energy it needs to remain healthy and help control hunger throughout the day. Whole fruits, low fat dairy, nuts, whole grains, lean meats, legumes and lots of fresh vegetables are all delicious choices for healthy menus. The Academy of Nutrition and Dietetics also reminds us that how much you eat is as important as what you eat. Remember the adage, calories in calories out? The more you move the more you can eat. Green Hill recommends seniors and caregivers find activities that you enjoy and stay active.

At Green Hill, Registered Dietitian/Nutritionist Michiko Tomioka and Chef Jomar Bras kicked off Nutrition Month with a presentation on nutrition dense foods on March 7. Michiko and Jomar served samples of not so guilty pleasures as the Saint Patrick’s Day Shake and Guilt Free Chocolate Mousse.  The ingredients for the shake included: bananas, skim or lactaid milk, spinach, cinnamon, lemon and matcha (green tea) powder, a great antioxidant.  The ingredients for the mousse included: avocados, bittersweet chocolate, and coconut oil.

At Green Hill residents enjoy healthy and delicious European service meals three time daily in the Legacy Building and home cooked meals in the Green House® Homes, along with a full array of tasty snacks throughout the day. Residents also participate in exercise and wellness classes, and enjoy walks and rolls around the beautiful 23-acre campus in West Orange, New Jersey.

Recipes:

Guilt Free Chocolate Mousse
Yields 4 x 4 oz. portions

1 Hass avocado

4 Tb coconut oil

4 Tb cocoa powder

1 Tb lemon juice

1 cup skim milk

Procedure:

1. Blend avocado pulp and milk in a blender until smooth 2 min.
2. Add lemon juice, cocoa powder and honey and blend for another minute.
3. Make sure to have a creamy even consistency
4. Add coconut oil and blend to a shiny even color.
5. Refrigerate for 2 hours and serve.
6. Good for 7 days in refrigerator

St. Patrick shake
No added sugar, no fat, high in vitamin/ mineral to contribute to anti-inflammatory. Green tea helps to meditation.

Yields 6 x 1  6 oz. portion

3 peeled ripe frozen bananas

2 cups skim milk

1 cup baby spinach

1/2 lemon juice

1/4 tsp. cinnamon powder

1/4 tsp. Matcha powder (green tea)

Procedure

1. Blend banana, spinach and milk until smooth
2. Add lemon juice, cinnamon and Matcha and blend for few seconds.
3. Serve immediately ( good for two hours in refrigerator)

6 oz per serving

90 kcal ( no added sugar)
4g protein
2g daily fiber
110 mg Calcium
