Apple and Carrot Salad
The apple season is here! Did you know that an apple is a member of rose family? The apple was respected as symbol of beauty and Greek mythology. Apple journeyed to the North America in 16th century. The majority of nutrients come in their skins so eat unpeeled organic apples.
This quick recipe is high in protein, fiber, vitamins A and C, potassium. Delicious for the whole family.
Ingredients
Yield 6 ¾ cup servings
1 cup Carrots, Fresh, shredded
1 cup Apples,Fresh, Unpeeled, Cored, Diced
1 cup baby spinach, cut into half
1/2 tsp Ginger Root, Fresh, Minced
1/2 cup Raisins, Golden or Dark
1/2 cup Greek Yogurt, Plain, Low Fat
1/2 Lemon juice, freshly squeezed
1 tsp Honey (optional)
Directions
Using a medium bowl, combine ingredients except spinach, stir well and refrigerate 10 minutes. Dress plate with spinach then serve.
